
Pasta with fish sauce
Description
The recipe won't take much time. You planned to have fried fish with pasta for lunch, but the fish quality is such that you can't fry it in nice pieces at all? I'll tell you. Serve hot.

Clean the fish thoroughly from scales and innards, and cut off the head.

And fillet it, removing all bones. Rinse and pat dry.

In a small amount of olive oil, sauté finely chopped onion until lightly golden. In a separate skillet, fry the fish slices. You can place the fillets whole, then break them into pieces later, or cut them into small pieces right away.

In one skillet, combine the sautéed onion and fish, add chopped tomatoes in their own juice, capers, salt, pepper, bay leaf, and basil. Cover with a lid, bring to a boil, then simmer over low heat for 20–25 minutes. If you prefer a thicker sauce, cook uncovered.

Boil the pasta in salted water according to the package instructions (it's better to slightly undercook it, so the pasta remains al dente), then add the pasta to the sauce in the pan. Let it simmer for a minute, and then it's ready to serve.
