
Lard Spread for Sandwiches
Description
Perfect for serving and for pairing with drinks. If you have time, be sure to refrigerate the finished dish for at least 1 hour so the garlic aroma spreads throughout the paste, making it richer and more aromatic. If desired, you can also add other spices and seasonings.

Prepare the specified ingredients. Buy fresh pork fat, without any meat layers.

Rinse it in water and pat dry with paper towels. If there is skin, cut it off. Cut the fatback into small cubes.

Pour them into the food processor bowl. Peel the garlic cloves, rinse, and finely chop. Add to the bowl. If desired, you can also grind the lard in a meat grinder.

Add the salt and ground black pepper. If you like pastas with a spicy kick, add a couple of pinches of hot red pepper.

Grind everything for about 5–7 minutes, turning the lard into a paste.

Spread the lard paste into a ramekin or bowl and serve with black or rye bread and a vegetable platter.
