
Pasta stuffed with sausage and spinach

You can use ready-made tomato sauce or make it yourself

1. Preheat the oven to 350 degrees with the rack in the center position. Dice the onion. Coarsely chop the spinach. Bring water to a boil in a large pot. Add 1 tablespoon of salt and the pasta. Cook according to the package instructions. When the pasta is done, drain the water.

2. Meanwhile, in a large skillet over medium heat, cook the sausage until browned, breaking it into large pieces. Add the onion and ½ teaspoon salt. Cook, stirring, until the sausage and onion soften. Add the garlic and red pepper flakes. Cook, stirring constantly, until fragrant, about 30 seconds. Remove the skillet from heat and stir in the spinach leaves. Transfer the mixture to a large bowl and mix in the ricotta, shredded Provolone cheese, Parmesan, and eggs.

3. Lightly coat the baking dish with tomato sauce. Fill each shell with 3-4 tablespoons of the prepared filling. Arrange the stuffed pasta in the baking dish.

4. Evenly pour the remaining tomato sauce over the top. Cover the dish with aluminum foil. Bake for 20 minutes, then remove the foil and bake for about 10 minutes more, until bubbling at the edges. Let stand for 5 minutes before serving.
