
Pasta (master class)
Description
The dish is prepared without unnecessary complications. Cooking it is quite simple—just choose fresh, juicy vegetables and prepare a meat sauce using ground meat. Boiling the pasta is the easiest part. I used a mix of two types of ground meat, but you can easily use only beef, for example. The finished dish is ready to be served.

Step 1

In a separate pot, bring water to a boil, add pasta and cook until done.

Melt sliced smoked bacon in vegetable oil. When it has rendered slightly, add chopped onion to the pan.

Dice the carrot finely. Add to the onion in the frying pan.

Chop the celery and bell pepper. I use a pre-prepared frozen mix of pepper and celery. If you don't like one of the vegetables, simply leave it out.

Add both types of minced meat and finely chopped chicken meat to the well-fried vegetables.

When the meat changes color, pour dry red wine into the pan.

When the wine has reduced by 50%, pour into the pan chicken or vegetable broth mixed with 3-4 tablespoons of tomato paste.

Simmer the meat sauce until all the sauce ingredients become tender and the sauce reaches the desired consistency. I highly recommend adding a spoonful of sugar to the sauce, as tomato paste and wine are quite acidic. Add spices to taste. I used salt, ground black pepper, coriander, and dried basil. Add the cooked pasta (without water) to the skillet and mix well.

Place the cooked pasta into a bowl. Sprinkle with grated cheese to taste and serve. I should mention that not everyone likes cheese with this sauce. The sauce itself is very tasty, and in my opinion, the cheese is unnecessary.
