
Baked beef liver pâté
Description
The recipe won't take much time. To prepare this dish, you will need beef liver. To get rid of its characteristic bitterness, it must be soaked in milk. The longer the liver stays in it, the better. To find out, It can be served warm or chilled.

Wash the liver and cut it into large pieces. Remove the membranes from the liver. Place it in a bowl, cover with half the cold milk, and salt. Let it sit for 30 minutes, or better yet, leave it in the refrigerator overnight.

Drain the milk from the bowl with the liver, beat raw chicken eggs into it. Pour in the remaining fresh milk, and blend the ingredients with a blender until smooth. Add butter and ground paprika.

Grease a baking dish with butter. Then sprinkle it with semolina or cornmeal so the food doesn't stick to the dish during baking.

Peel and wash the vegetables. Slice the onion and mushrooms, grate the carrots. Sauté the vegetables in animal fat until golden. Place them in a baking dish and sprinkle with rosemary. Pour the liver mixture on top.

Place the mold in a deep baking pan filled halfway with water. Then preheat the oven to one hundred eighty degrees, place the pan in it. Bake the pâté for about an hour, then place pieces of butter on top and leave in the oven for another ten minutes.
