Country-style Pâté

Description

Perfect for the table and with drinks. Rustic French pâté is the ideal appetizer. With its coarse texture, it pairs best with meat bread. Country-style pâté can be eaten hot, but when chilled and well aged, it is a magnificent dish that can be served at any festive table. Serve with greens and sauce.

    Prepare the ingredients for making country-style pâté. Rinse the liver and remove any fat and connective tissue. Be sure to check for the gallbladder; if you find one, remove it. Instead of cream cheese, you can use full-fat sour cream.

    Peel the onions. In a frying pan, melt the butter and sauté the onions until soft and lightly golden.

    Chop the pork and chicken breast fillets with a knife, or grind them through a meat grinder using a coarse plate. Cut the liver into pieces, not too small. In a bowl of suitable size, combine the meat, liver, breadcrumbs, cream cheese (or full-fat sour cream), egg, minced garlic, sautéed onion, and a little cognac.

    In a mortar, grind black ground pepper and dried thyme with salt. Add the spices to the ground meat and knead it thoroughly so the ingredients are evenly distributed.

    Line the pâté baking dish with parchment paper. Grease the parchment with butter or vegetable oil. Spread the meat mixture into the dish and distribute it evenly throughout. To remove air pockets, lightly tap the dish on the countertop.

    Place the mold with the meat mixture in a larger container and pour hot water into it. The water level should be slightly higher than the level of the pâté mixture in the mold. Cover the mold with foil and place the entire setup in an oven preheated to 140–150°C. Bake the pâté for 1.5 hours. Remove the pâté from the oven and let it cool. Then place the pâté under a press and refrigerate for 24 hours. If desired, you can taste it after just 2 hours.

    Store the pâté in the refrigerator, wrapped in parchment paper.
