
Pork Crackling Pâté
Description
Suitable for both special occasions and everyday meals. Serve the crackling pâté chilled, with various pickles, fermented vegetables, fresh vegetable salads, or a potato side. Keep in mind that the longer the pâté stays in the refrigerator, the more pronounced the garlic flavor will become. It can be served warm or chilled.

Prepare the specified ingredients.

Pour the cracklings into a blender or food processor bowl. The product must not be hot — only cooled!

Boil the chicken eggs in advance and let them cool. Peel off the shells, rinse them in water, and dice into small cubes. Add to the blender bowl.

Peel and rinse the garlic cloves, slice them. Rinse the green onion stalks and chop them, then add them along with the salt and garlic to the container with the remaining ingredients.

Grind everything until almost smooth. If the pâté turns out a bit dry, add a little cucumber brine or broth — just a tiny amount so it doesn’t become runny.

Place it on a plate or in a ramekin or piala, garnish to taste, and serve. This dish is especially delicious with pickled cucumbers.
