
Mung Bean Pâté
Description
I used to buy similar pâtés at health food stores, but now I've learned to make them myself just as well. I recommend using dried vegetables specifically; fresh ones make the pâté consistency too runny. You can also add dried mushrooms. Using the same recipe, you can make a bean pâté. Take note: it can be served warm or chilled.

Prepare all ingredients.

Soak the sunflower seeds in water for a couple of hours, then rinse thoroughly.

Boil the mung beans in water for 30–40 minutes.

Heat the coconut oil, add all the spices, salt, and dried vegetables. Pour in water and cook until the vegetables are tender.

In a blender, blend all the ingredients. If necessary, add more water until creamy consistency.

Transfer the pâté to a jar and refrigerate for an hour so it sets slightly.
