Chicken Liver Pâté in a Multicooker

Description

Perfect for the table and for drinks. Making pâté in a multicooker is sheer pleasure! No problems and no extra steps! Add the ingredients and stir once. And puree it, of course. In the end, you get a rich, tender pâté with a bright aroma and deep flavor. Pâté was one of the first dishes I made in my multicooker. And for several years now, I have been making it every week. No fuss at all. It can be served warm or chilled.

    Fresh pork fatback, preferably with meat streaks, cut into thin slices and arrange on the bottom of the slow cooker bowl. On top, add a layer of onion cut into fairly large pieces.

    Next, arrange a layer of carrot slices.

    Now it's the chicken liver's turn. Of course, it should be carefully picked through, rinsed well, and patted dry.

    Close the multicooker with the lid and cook on the "Bake" setting for 45 minutes. After half an hour, stir the contents, trying to flip the fatback slices and send them back to the bottom again.

    After the multicooker signal, season the liver with salt and pepper and sprinkle with a pinch of sugar. Mix well and let stand on the keep-warm setting for 20 minutes. Then cool.

    Transfer the contents of the slow cooker into the blender bowl and pulse until finely chopped. Then add pieces of softened butter, sprinkle the pâté with freshly grated nutmeg and marjoram rubbed between your fingers. Pulse the pâté again until smooth and uniform.

    Transfer the pâté to a lidded glass container and let it mature in the refrigerator for a couple of hours. Though it is very tasty even right away.
