
Chicken liver pate with apples
Description
A juicy pâté can be served for breakfast, lunch, or dinner with any savory baked goods, crackers, oat crisps, etc. The bright flavor of the dish will surprise your family and friends, so prepare a little extra in advance, especially if you have a large family or group. The pâté can be served with any side dish: pasta, porridge, or mashed potatoes.

Prepare the listed ingredients.

Rinse the chicken liver in water, trim off the membranes, and place it in a pot. Cover with warm water and boil for 7–8 minutes from the moment it comes to a boil, but no longer, so the offal does not start to taste bitter!

Meanwhile, wash apples of any variety in water, peel them, and slice the flesh into a deep container. Be sure to taste the flesh to determine how much salt you will need to add. Sometimes very sweet apples turn up, and because of their flavor the pâté will end up slightly sweet.

Cut the peeled half of the onion any way you like. Heat vegetable oil in a skillet and add the sliced onion. Sauté for 2–3 minutes until golden.

Arrange the apple slices, season with salt and pepper.

Pour in water and simmer over moderate heat until the apple flesh is tender.

Place the boiled chicken liver in a deep container. Add the stewed apples as well.

Puree the contents of the container with an immersion blender until smooth. If desired, you can add melted butter — 2–3 tbsp.

Transfer the prepared chicken and apple pâté into a ramekin or small bowl, place in the refrigerator for 1 hour, then serve.
