    Cut the rabbit carcass into pieces and wash thoroughly.

    Peel the onion bulb, stick cloves into it. Put the onion in the pot.

    Cut the garlic head crosswise; add the bottom part to the onion.

    Put the pepper and rabbit pieces in a pot, pour in the wine. Bring to a boil over medium heat and simmer for 15 minutes. Then add enough water to cover the meat and cook over low heat for 1 hour. At the end of cooking, add the bay leaf and rosemary.
