Step 1

First, we need to roast all the ingredients. Peel the onion, cut it into pieces, and place it in a baking dish. On top of the onion, add the beef cut into chunks, then the chicken liver. Peel the apple, remove the core, cut the apple into wedges, and add them to the dish as well. Season everything with spices (do not add salt), cover the dish with a lid or wrap it in foil, and bake in an oven preheated to 180°C for 60–80 minutes.

When the time is up, remove the pan from the oven and let its contents cool slightly. Cut the crust off the bread and soak it in cognac; when the bread has softened, add it to the other ingredients.

Transfer everything to the blender bowl and blend, gradually pouring in the cream. Add the eggs, season with salt to taste, and blend again until smooth and airy. Next, grease a baking dish (preferably a shallow one) with olive oil, transfer the prepared meat mixture into it, and spread it evenly with a fork or spoon. Place the pâté in an oven preheated to 180°C for about 10 minutes.
