Lentil pâté

Description

Perfect for the table and with drinks. Homemade lentil pâté is an excellent alternative to liver pâté. Serve it with bread, crackers, or in tartlet shells. You can surprise guests who will never guess that lentils are the base of the pâté. It can be served warm or chilled.

    1. First, rinse the lentils thoroughly, cover with cold water, and put them on the heat. You can use any lentils for this lentil pâté recipe, but cooking times may vary. Cook green lentils for 40 minutes, brown for 25 minutes, and red for up to 30 minutes. I usually soak the lentils for an hour and then cook them in the same water. I use about three times as much water as lentils by visual volume. After the water comes to a boil, season the lentils lightly with salt and pepper to taste.

    3. Pour a little oil into the skillet and heat it well. Add the onion and sauté over medium heat until translucent.
