
Easter Cottage Cheese Kulich
Description
The recipe won't take much time. First, you need to prepare the starter: mix yeast, 1 tsp sugar and 1 tbsp flour with a little warm milk or whey, and let it sit until a foamy cap forms. In another bowl, use a mixer to combine cottage cheese with 3/4 cup sugar and eggs (the cottage cheese should be free of lumps), add softened butter and all the other ingredients. Add the starter to the mixture and add flour. Knead the dough well, place it in a warm spot to rise. When the dough doubles in size, fold in previously steamed, dried and flour‑coated raisins. Divide the dough into portions, place them into molds, filling each half or less. Leave again in a warm place until the dough rises to the edge of the mold. Bake in a preheated 180 °C oven until a toothpick comes out dry. For glazing, mix egg whites with a cup of sugar, brush the cakes on top, and sprinkle with decoration. The baked goods are ready. Serve at the table.
