
Easter kulich (paska) with dried fruits and nuts
Description
Delicious baked goods for the whole family. Try using this recipe. Serve with tea or coffee.

1. Prepare the dried fruits and nuts. Chop the nuts for the dough with a knife, and pour boiling water over the dried fruits, let them soak for 20 minutes, then chop. To prepare dried fruits for decoration, scald them with boiling water.

2. Add a spoon of sugar and lukewarm milk (a few spoons) heated to 35 degrees to the yeast.

3. Add 2 tablespoons of flour to the starter and mix. Cover with plastic wrap and let it sit for 15–20 minutes, until the mixture doubles in volume.

4. Beat 3 eggs and 2 yolks. Keep the remaining 2 egg whites in the refrigerator.

5. Add sugar, vanilla, and half a teaspoon of salt to the eggs. Beat with a mixer until the sugar dissolves.

6. Warm the milk and cream to 30-40 degrees and add the yeast. Stir until the mixture becomes uniform.

7. Sift the flour 2-3 times to remove lumps and aerate it. Add 2/3 of the flour to the milk with yeast and thoroughly mix the dough with a spoon.

8. Add the beaten eggs to the resulting dough and mix. Then melt the butter and incorporate it into the dough as well.

8. Add the remaining flour to the dough. The dough should be thick, like pancake batter. After that, add the sunflower oil. Mix with a spatula or your hands. The dough will stick to them.

9. To allow the dough to rise, place it in the multicooker for 20–30 minutes at 35 degrees. After that, knead the dough on the table, adding flour. Then pour oil over the table and the dough, and continue kneading until the oil is absorbed and the dough no longer sticks to your hands and the table.

10. Add dried fruits and nuts to the dough, add lemon or orange zest, and mix. Add sunflower oil, then let the dough rise for 1 hour.

11. Fill the baking pans with dough slightly less than halfway. Place them in the oven for 15–20 minutes at 50 degrees to let the dough rise. Then increase the temperature to 180 degrees and bake for 30 minutes.

12. To prepare the glaze, lightly beat 2 egg whites, gradually add powdered sugar, and whisk with a whisk. At the end, add lemon juice and mix. While still warm, brush each kulich with the glaze.
