Easter Kulich on Sourdough Starter without Yeast

Description

Homemade baked goods for tea. Traditionally, Easter kulich is made from enriched dough. To prepare a yeast-free Easter kulich using a starter, the most important step is preparing the starter. If you've never made one before, I recommend checking the recipe on the website to see how it's done. Serve warm or chilled. Perfect with tea.

    Prepare the starter. I've previously made sourdough bread, so I already had a starter—take 50 grams of it. Add 50 grams of flour and 25 grams of water. Mix well and let it sit in a warm place until it increases in volume by 2-3 times. Once the starter has risen, add another 80 grams of flour and 40 grams of water, and let it rise again. Final step: to the risen starter, add 150 grams of flour and 75 grams of water, mix thoroughly, and wait until it rises. The final starter should look approximately like in the photo.

    Now, with the ready starter, you can prepare the leaven. Mix 300 grams of starter, 130 grams of milk, 100 grams of sugar, 100 grams of flour, and 50 grams of semolina. Mix thoroughly and place in a warm spot to rise (approximately 3 hours).

    While the starter is rising, grate the carrot. If it's not very sweet, add a tablespoon of sugar. Also, soak the dried fruits in water so they become soft.

    The sponge has risen, so you can proceed with the dough: sift 300 grams of flour and add the carrots. Mix the dried fruits and candied peel with 50 grams of semolina. Combine everything with the sponge, adding soft butter (50 grams), vegetable oil, vanilla, and cardamom to taste. Sometimes I also add lemon zest.

    Knead the dough until smooth, then leave it in a warm place for about 30 minutes; you can cover it with a towel.

    Prepare the molds, grease them with oil, and line with parchment paper. Fill them with dough up to one third. Let the dough rise in the molds until it nearly reaches the top.

    Bake in a preheated oven at 180 degrees until a golden crust forms; I check readiness with a toothpick, which should come out dry.
