
Easter cake
Description
It pairs perfectly with tea and coffee. The cake can be made not only as a substitute for traditional Easter breads, but also to diversify the holiday menu. Tender, fragrant, and literally melting in the mouth, it will please everyone present. In my version I have raisins and candied peel, but you can use any dried fruits, add dried cherries or cranberries, nuts, dates, etc. Take the recipe into your arsenal. It can be served with tea or coffee.

Prepare all the ingredients according to the list. Take the butter out in advance and let it sit at room temperature.

In a deep bowl, combine warm milk, yeast, 1 tsp sugar, and 1 tbsp flour from the total amount.

Stir and let stand for 20 minutes.

Then add the yolks, sugar, vanilla, salt, orange zest, and soft butter to the pre‑ferment.

Mix.

Add the flour in portions, in 2–3 steps.

The dough should be thick and sticky.

Cover the bowl with a towel and place it in a warm spot for 1.5–2 hours, or until it doubles in volume.

Then add the rinsed and dried raisins and candied fruit.

Transfer the batter into a cupcake pan with a hole in the middle. If you have a similarly large pan as I do, feel free to make a double portion; the cake will turn out taller and fluffier.

Cover the dish with a towel and let it rest in a warm place for another 30–40 minutes.

Then place it in a preheated oven at 200 °C for 15 minutes, after which reduce the temperature to 180 °C and bake for another 20–25 minutes.

While the cake cools, prepare the glaze. You can make any glaze, I’ll share my version. In a deep bowl, combine 1 egg white and 100 g of sugar.

Whisk.

Place it over a water bath and, stirring constantly, cook for about 5 minutes; the sugar should dissolve and the mixture become thicker.

Then remove it and whisk with a mixer, gradually increasing the speed for about 3–5 minutes. The longer you whisk, the thicker the mixture will become.

Decorate the cooled cake with icing.
