
Easter cupcakes
Description
A cupcake is a small-sized cake intended for one person. The difference between cupcakes, cakes, and muffins is minimal and lies primarily in the fact that a cupcake is indeed a cake—just a miniature one. Therefore, it has all the characteristics of a cake: a delicious sweet base and an attractively decorated top. It's worth noting that modern bakers are capable of creating true masterpieces and wonders on top of cupcakes. I am offering my own version here. Serve with tea or coffee.

Prepare all the necessary ingredients. Please note that all ingredients for the dough—eggs, sugar, and flour—should be at the same temperature, preferably room temperature. Therefore, take the eggs out of the refrigerator in advance.

Beat the eggs with sugar using a mixer for 8–10 minutes, until the mixture doubles in volume and lightens in color.

Mix in the flour as carefully as possible. Add it literally one tablespoon at a time, stirring with a spoon in a clockwise motion from the bottom up, lifting the dough as you go.

The dough should turn out quite liquid and very tender, resembling foam.

Place the dough into the molds. You can use paper, metal, or silicone molds. Bake the cupcakes in the oven at 180 degrees for 15 minutes.

Let the finished cupcakes cool, and in the meantime prepare the icing. To do this, beat 1 chilled egg white and 1/4 cup of sugar at high speed using a mixer. Spread the icing over the cupcakes, and decorate with sprinkles and candies.
