Easter paska
Description
The baking is simple and quick. To make Easter buns, you'll need a short list of ingredients: homemade thick kefir (I made mine from homemade milk and starter culture), butter with at least 72% fat, sugar, eggs, raisins (you can use any dried fruit, candied fruit, or ground nuts). For flavor, you can add vanilla flavoring or natural vanilla, vanilla sugar. See all the details in the recipe. Serve with tea or coffee.
Instructions
- 1
Step 1

Prepare the ingredients. Let's get started!
- 2
Step 2

Place the butter into the kefir, then put it in the microwave for a couple of minutes until the ingredients warm up and the butter melts. Mix with a whisk.
- 3
Step 3

Add sugar, eggs, salt, and mix.
- 4
Step 4

Add the flour in portions, add turmeric and instant yeast. First mix with a whisk, then use a spoon or your hands, whatever is convenient.
- 5
Step 5

Knead a soft, pliable dough, do not add more flour; instead, grease the surface and hands with vegetable oil.
- 6
Step 6

Place the dough in a large bowl or pot, as it will rise well. Cover with a cloth and set aside in a warm place for 1 hour.
- 7
Step 7

The dough has risen, it is aromatic and fluffy. Mix the raisins with a teaspoon of flour.
- 8
Step 8

Add raisins to the dough.
- 9
Step 9

Mix the dough with raisins well.
- 10
Step 10

Place the dough into the molds, making sure to line the bottoms with parchment paper. I have two large molds and two medium-sized, deep ones. Try not to fill the molds more than one-third full, as the dough rises well, especially in the oven.
- 11
Step 11

Place the molds covered with a towel in a warm place for 40 minutes.
- 12
Step 12

Bake in a preheated oven at 180 degrees for about 40 minutes.
- 13
Step 13

Let the paska cool completely, then decorate with icing and sprinkles. Choose any icing you like: meringue, chocolate, or sugar glaze with gelatin.
