
Easter bread in a bread maker
Description
Of course, this time the bread machine won't actually bake anything—it will only mix the ingredients for paska (Easter cheese dessert). But oh, how perfectly it does it! It's precisely the thorough mixing and blending of ingredients into a smooth, uniform mass that makes paska tender, airy, and so delicious. Doing this by hand is difficult, a regular mixer won't help much either, and not everyone owns a powerful, high-capacity blender. So, the bread machine—and only the bread machine! Here's a simple recipe for paska in a bread machine: 1. Separate egg yolks from whites and beat the yolks with sugar. 2. Gradually add cream to the yolk mixture. Continue beating and gently heat over low heat—do not let it boil! As soon as the mixture thickens, add vanilla and cinnamon, stir well, and remove from heat. 3. Chop the nuts finely; optionally, toast them in a dry skillet. 4. Place cottage cheese into the bread machine container, then add the cream-egg mixture, dried fruits, and nuts. 5. Turn on the bread machine to the dough kneading mode. When the machine beeps, indicating the end of kneading, open the lid and taste the paska. If the mixture isn't smooth enough, run the kneading cycle once more. 6. Transfer the finished paska mixture into a previously prepared mold greased with butter (to make removal easier later). Press down firmly, cover, and refrigerate for 12–24 hours. 7. Invert the mold onto a flat serving plate and release the paska. Decorate the finished paska with nuts, candied fruits, dried fruits—whatever your heart desires! ;)
