
Paska (cottage cheese)
Description
The dish is prepared without unnecessary complications. Most housewives limit themselves to baking Easter bread during the bright Easter holiday. Try to deviate slightly from traditions and make at least one cheese paskha—I assure you, you'll like it. You can add any dried fruits, spices, or nuts. Serve the cheese paskha cold, taking it out of the refrigerator. The ready dessert can be served at the table.

1. Prepare all the ingredients: separate the yolks from the whites, take the butter out of the refrigerator in advance. Rinse the candied fruits and dried fruits.

2. Place the cottage cheese in a bowl and mix it with granulated sugar, butter, egg yolks, cream, and vanilla sugar. Pass the resulting mixture through a sieve twice.

3. Cut the candied fruit (if necessary), apricots, and raisins into small pieces, mix together, pour in rum (you can use brandy). Let it sit for 20–30 minutes.

4. After the required time, drain the alcohol from the dried fruits, add the fruits to the bowl with the cottage cheese mixture and mix well. Line the mold for making paskha (or any other suitable container) with cheesecloth folded in two layers, then place the cottage cheese mixture inside and press it down. Place a small weight on top and refrigerate overnight. Put a plate under the mold, as liquid will be released.

5. Carefully remove the finished paskha from the mold and take off the cheesecloth. You can decorate it with holiday symbols or leave it as is.
