One week before preparation, prepare the candied fruits and dried fruits. To do this, wash them, dry them, place in a bowl, and pour over brandy. Leave the candied fruits in the refrigerator for a week.

Heat the cream until warm. Dissolve the fresh yeast in it. Sift half a kilogram of flour into a bowl and mix thoroughly. Place the starter in a warm spot to rise.

Separate the yolks from the egg whites. Place the whites in the refrigerator. Rub the yolks with sugar until white, adding vanillin. Melt the butter in a water bath.

When the sponge has risen, add to it the yolks rubbed with sugar, salt, melted butter, and the remaining flour. Knead until you get a smooth and elastic dough.

Drain the candied fruits and dried fruits from the cognac and roll them in flour. Add them to the dough. Then grate half of the chocolate and also add it to the dough. Mix everything thoroughly.
