
Delicate curd Paskha
Description
Delicious baked goods for the whole family. 1). Beat the cottage cheese with a mixer, add softened butter, and mix. 2). Separately beat the eggs with sugar and vanilla, place the mixture over medium heat, bring to a boil, stirring constantly, and cook until it begins to thicken (about 3 minutes). Then let it cool. 3). Mix the cottage cheese (step 1) with candied fruit (finely chopped), nuts (finely chopped) and raisins. 4). Add the egg mixture and cream to the cottage cheese and blend with a mixer. 5). Line a cheesecloth mold (or a colander if you don’t have a mold) with muslin folded in 2‑3 layers. The edges of the muslin should hang over. Spoon the cottage cheese mixture into it. 6). Fold the edges over. 7). Place the mold into a bowl, as whey will drain. 8). Put a weight on top. Put the mold with the weight into the refrigerator overnight. 9). Remove the muslin edges, turn the mold over, and discard the remaining muslin. 10). Decorate the Easter cheese as desired. Serve cooled or slightly warm.
