Since childhood, this wonderful holiday has been associated for me with delicious Easter dishes, especially desserts and baked goods, which filled the table to the brim on this day. And of course, the most delicious paskha was the queen of all the dishes! Today, I'd like to share with you a rather interesting recipe for strawberry paskha that will make your holiday even brighter. Essentially, it's a new take on an old, well-known dish, but here its flavor acquires new refined notes and taste nuances. The result is an incredibly delicious and tender paskha—a true delicacy for gourmets. Try it yourself, and my recipe for strawberry paskha will help you easily succeed. 1) First, pour brandy over candied fruits and raisins and let them soak for about 15 minutes. Meanwhile, rub the cottage cheese through a sieve to make it softer and fluffier. 2) Mix the softened butter with sugar and beat until the mixture turns pale. Add egg yolk and juice from half a lemon, beat everything with a mixer, then gradually mix in the cottage cheese. Whip the egg white with the mixer and gently fold it into the cheese mixture. 3) Chop the strawberries and combine them with the prepared cottage cheese mixture. Add the soaked candied fruits and raisins, then mix well. 4) Line the paskha mold with cheesecloth and fill it with the strawberry-cottage cheese mixture. Press it down firmly and refrigerate overnight. Before serving, decorate the finished paskha with strawberry slices and serve.
