
Easter pudding from milk

The dish is prepared without unnecessary complications. Even if we're not deeply religious, we still prepare for this holiday in advance, always awaiting it with a special feeling—after all, Easter is the celebration of spring, renewal, and joy. We look forward to New Year's with the same childlike innocence—sure, maybe Santa Claus doesn't exist, but can't we secretly hope for a miracle at any age? That's why I don't consider the extra hours spent preparing for Easter to be wasted. During this time, one can calmly reflect—something we rarely have time for in the frantic pace of modern life. As we beat eggs, sift flour, warm cream—performing those simple actions our great-grandmothers repeated day after day—we come closer to understanding the simple yet profoundly meaningful way of life they led. By mastering the recipe for Easter pudding made with milk, even a modern office lady, tailored precisely to the image of her fashionable business suit, can step beyond her usual persona at least once a year and joyfully look forward to Easter. Because at any age, one can—and should—secretly hope for a miracle. The finished dessert can now be served at the table.

First, warm the milk.

Beat the eggs with a whisk.

And add sour cream to them. Mix.

Pour the sour cream and egg mixture into the boiling milk.

And constantly stirring, cook until the milk protein curdles, forming soft cottage cheese and clear whey.

Place the cottage cheese on a cheesecloth and let the liquid drain off. It's best to hang it over a bowl, allowing the cottage cheese to squeeze out the whey by its own weight.

When the whey stops dripping, remove the curd and thoroughly mix it with softened butter and sugar.

Fill the mold, lined with a damp cheesecloth, with the cottage cheese mixture.

Place the mold into a container and put a small weight on top.

After a couple of hours, the Easter cake can be removed from the mold.

It's amazingly soft, tender, and fragrant—though we didn't add any flavorings. This little pyramid sweetly smells of childhood... You can add nuts, dried fruits, or candied fruits—perhaps the paska will become even tastier with them. But somehow, I don't think so :). Christ is Risen!
