Countess Easter Pudding
Description
The dish is prepared without unnecessary complications. 1. The preparation of noble-style paskha begins by placing the cottage cheese into a bowl and putting it under a press. Place it in the refrigerator for 1 day. 2. After 24 hours, proceed to the next step. Beat the eggs with sugar. 3. Add butter and sour cream, then mix thoroughly. 4. Transfer the mixture to the stove. Heat it over low flame, stirring constantly, until it comes to a boil. Be careful not to let the eggs curdle. 5. Pass the cottage cheese through a fine sieve to remove any lumps. 6. Combine the hot mixture with the cottage cheese and mix thoroughly. 7. Meanwhile, prepare the raisins. Pour boiling water over them and let them sit for 2–3 minutes. Then cool, dry, and slightly chop them. You can also add other dried fruits and nuts. 8. Add the raisins to the prepared mixture. Add vanilla and a pinch of salt, then mix well once again. 9. Fill the prepared mold with the cheese mixture and place a press on top. The homemade noble-style paskha must remain in the refrigerator under pressure for at least 48 hours. You may leave it for up to 3 days. 10. Carefully remove the paskha from the mold. Before serving, decorate it as desired. The finished dessert is ready to be served.
