
Royal boiled paska
Description
The dish is prepared without unnecessary complications. Among the traditional Easter dishes, you'll find kulich, eggs, and cottage cheese paskha. Many of you don't make paskha, but that's a mistake. This delicious dessert is very easy to prepare. Even those who don't like cottage cheese will enjoy this paskha, believe me. It turns out very tender (the cottage cheese is almost undetectable), fragrant, and extremely tasty. The recipe is right before you—let's get cooking. And may you have a joyful holiday. Sort the raisins and pour boiling water over them. After about 10 minutes, drain the water and dry the raisins on a towel.

Pass the cottage cheese through a sieve. You can also chop it with a blender, but the texture won't be quite the same, so it's better to run it through a meat grinder with a fine plate.

Add egg yolks or whole eggs, sour cream, soft butter, and sugar (regular and vanilla) to the mashed cottage cheese. Now you can use a blender: blend or mix everything together into a smooth, homogeneous mixture.

Place the cottage cheese mixture into a small saucepan, then set this saucepan into a larger one filled with hot water, making sure the bottom touches the water. Place it on the stove over heat slightly below medium, stirring constantly. As the mixture heats up, it will start to melt and become liquid, then gradually thicken. When bubbles begin to appear, remove it from the heat. This process takes about 20 minutes.

Place the saucepan into a bowl with water and ice, and start stirring the cottage cheese mixture until it cools completely.

Add the dried raisins, zest, and almonds. Mix well.

Place the Easter mold on a plate, line it with 2-3 layers of cheesecloth, and put the curd mixture inside. Then cover with cheesecloth and place a weight on top to let the whey drain. Refrigerate for about 10-12 hours.
