
Royal cottage cheese Easter dessert

Beat the eggs with sugar and vanilla, then add two tablespoons of sour cream. Heat until just before boiling, stirring constantly, but do not boil! Then cool.

Take full-fat cottage cheese and squeeze the whey off it. Then pass the cottage cheese through a meat grinder. Add the cooled egg cream to the cottage cheese.

Then add washed and dried raisins, fried and chopped nuts, whipped cream or sour cream, and soft butter. Mix until the mixture is uniform.

To shape the paskha, you will need a special mold with a detachable side. If you don't have one, you can use a new flowerpot with holes in the bottom. Alternatively, prepare any mold that suits you, but don't forget to make holes!

Line the mold with a damp cheesecloth, then place the prepared cottage cheese mixture into it. Press down firmly and fold the ends of the cheesecloth over the top. Place the mold with the paskha on a plate to catch the draining liquid, and put a small weight on top. Refrigerate or keep in a cool place for at least 12 hours. Then remove the paskha, turn it out onto a serving dish, and decorate with candied fruits or sprinkles.
