
Steamed buns (struli)
Description
Homemade baked goods for tea. Few people prefer replacing bread with buns when serving the first course, but believe me, soup tastes much better with a light bun made with sourdough starter. You can shape the buns differently—roll them into snails or form small balls; in any case, it won't affect the taste. Baked goods made with sourdough starter are healthier than those made with regular yeast, so I recommend always keeping a few spoons of sourdough starter on hand for making fresh, healthy bread, cakes, or buns. Serve warm or cooled. Perfect with tea.

1. Prepare the starter: place the starter culture into a bowl, add water and mix thoroughly. Add flour and mix. Cover the bowl with plastic wrap and let sit at room temperature for 8 hours.

2. Dilute the sponge with water and mix well. Add the diluted sponge to the mixer bowl and mix until the flour and water are combined. Turn off the mixer and let it rest for 20 minutes.

3. Then add salt, sugar, vegetable oil, and knead the dough for 5 minutes at speed 2. Place the finished dough onto a floured surface and shape it into a ball by tucking the edges toward the center.

4. Place the dough seam-side down in a bowl greased with vegetable oil. Cover with plastic wrap and let stand at room temperature for 3 hours. Divide the dough in half and shape each piece into a ball. Wrap one piece in plastic wrap and set aside.

5. Knead the other part of the dough into a flat disc and roll it out into a large rectangular sheet. Brush the sheet with vegetable oil and trim the edges of the dough. Cut the dough into strips 4 cm wide.

6. Cut a strip from rectangle 1, fold it in half lengthwise, then roll it up into a small roll. Twist the base of the roll to shape it into a little rose.

7. Roll out a log from the leftover dough pieces and cut it into small pieces. Roll each piece into a flatbread, brush with vegetable oil, place a second flatbread on top, and also brush it with vegetable oil.

8. Place the third tortilla, fold it in half, and use a chopstick to press down on the tortillas along the diameter in a perpendicular direction to form a four-leaf clover shape.

9. Cover all buns with plastic wrap and let rest for 30 minutes. Grease the steamer with vegetable oil, place the buns inside and cover with a lid. Steam for 90 minutes.

10. Place the ready struli on a dish and brush with butter. Serve with soup and fresh herbs.
