
Steamed rice pudding
Description
The recipe won't take much time. The dish is very simple to prepare, healthy and nutritious. This pudding is perfect for afternoon snack or dessert. You can diversify plain rice with dried fruits, fresh fruits, berries, and spices. I occasionally bake it in the oven, but more often I prepare it by steaming. Serve chilled.

1. First, I rinse the rice until the water runs clear, then boil it until half-cooked.

2. Transfer the rice to a colander and drain the water. Then return it to the saucepan, pour in the milk, and cook for another 20 minutes after boiling.

3. Wash the orange, carefully remove the zest with a knife or a special tool, and squeeze the juice.

4. To the cooked rice, I add egg yolk, orange juice, and butter, then mix.

5. Beat the egg white until a fluffy foam forms, then incorporate it into the rice mixture.

6. Add some zest, cinnamon, granulated sugar, and mix.

7. I prepare the pudding in individual portions, but it can also be made in a large mold. I grease the molds with butter and place the rice mixture into them.

8. Place the molds in a steaming basket, cover with a lid, add water, and steam for 30–35 minutes. Serve immediately from the steamer, garnished with citrus zest.
