The dish is prepared without unnecessary complications. There is no strict recipe for "Papillote"—add whatever you like. Instead of parchment paper, you can use foil. Prepare the ingredients.

Prepare baking paper, preferably doubled, and brush the area where you will place the filling with olive oil.

Cut the carrot into strips.

Slice the onion into thin strips.

Cut the celery into small pieces.

Place the vegetables on parchment paper, add half of the olives on top, season with salt and pepper, and sprinkle with herbs.

Place the fish on the vegetable bed, sprinkle with dry white wine and olive oil, season with salt and pepper, and add the remaining olives.

Wrap the parcel, seal the edges tightly, and bake in the oven at 160–180 degrees for 20 minutes. Before serving, check the vegetables for doneness and, if necessary, keep in the oven a little longer.
