
Pancakes with berries
Description
Homemade baking for tea. Colourful pancakes are everyone’s favourite for breakfast or afternoon tea. Serve them with sweet fillings, sauces, or preserves: jam, jelly. Always add baking soda or baking powder to the batter so the bake turns out fluffy and light. Serve warm or chilled. Perfect with tea.

Prepare the listed ingredients. You can use any berries, but without large pits.

In a deep bowl, beat the egg and milk of any fat content together with granulated sugar and salt. Add the same wheat flour of the highest grade and baking powder to the bowl. Gently fold them into the liquid mixture. If you do not have baking powder, neutralize 1/2 tsp baking soda with vinegar and fold it into the batter.

Rinse the berries and remove the pits if there are any (cherries). Cut into small cubes or slices and add to the dough. Stir.

Pour in the vegetable oil and stir it into the dough. Because of how the berries react with the baking powder, the dough will turn a darker color—that’s perfectly normal—nothing to worry about!

Heat a thick-bottomed pan and grease it lightly with vegetable or butter the first time. Heat it thoroughly so the batter sets right away. Pour 2 tablespoons of batter into the center of the pan and reduce the heat to medium. Cook the pancake until bubbles on the surface start to burst. Then flip it and fry for about the same amount of time on the other side.

In the same way, cook the remaining berry pancakes.

Place the pancakes on a plate and serve them warm with whipped cream, berries, or jam.
