
Ryazhenka Pancakes
Description

Prepare the listed ingredients.

Crack a chicken egg into a deep bowl, pour in ryazhenka of any fat content, and add sugar and salt. Whisk everything for about 1–2 minutes.

Add the flour and mix it into the dough. Neutralize the baking soda with vinegar and carefully mix everything again. You may add a little vanilla sugar or any other flavoring. Stir in the vegetable oil.

Heat the skillet and grease the bottom with vegetable oil the first time. Pour 2 tbsp of batter into the centre of the skillet and reduce the heat to medium. Cook the pancake until large bubbles form on the surface.

Carefully loosen it with a wide spatula and turn it onto the other side. Fry for another 1–2 minutes.

Place the golden-brown pancake on a plate and bake the rest the same way, stacking them one on top of the other. Garnish with whipped cream and berries and serve warm.
