
Fluffy Yogurt Pancakes
Description
The pastry is easy and quick to make. Use plain yogurt with no fillers when preparing it. When frying, always use a non-stick pan, or breakfast will be ruined. Serve warm or chilled. Perfect with tea.

Prepare all ingredients in advance before you start cooking.

The yogurt should be warm, so transfer it to a saucepan and heat gently over low heat until it reaches a temperature of about 36 degrees.

Pour the vegetable oil into a roomy bowl, crack in the egg, and add the sugar. Whisk these ingredients together.

Pour the warm yogurt into this mixture and whisk everything together.

Sift the flour with the baking powder.

Whisk everything until you have a smooth batter with the consistency of low-fat sour cream.

Heat a dry skillet with a quality nonstick coating over medium heat and drop the batter one tablespoon at a time, forming pancakes. Cook on one side until bubbles form on the surface of the batter, then flip the pancakes to the other side with a spatula.

Arrange the cooked pancakes on a plate in a stack, drizzle with your favourite syrup, garnish with berries, and serve.
