
Ricotta Pancakes
Description
Delicious baked treat for the whole family. Both adults and children will happily enjoy these appetizing, golden-brown pancakes. This dessert can be served for breakfast, as an afternoon snack, or taken along to work or school. To make sure the dish is cooked through on the inside as well, cook it over very low heat; otherwise, you will get a browned crust and a raw center. Serve warm or chilled. Perfect with tea.

Prepare the listed ingredients.

Pour kefir of any fat content into a container, crack in a chicken egg, add sugar and salt, and spoon in the ricotta.

Mix everything thoroughly and beat lightly. Quench the baking soda with vinegar and mix the mixture again.

Add the wheat flour and knead a thick batter, like for pancakes.

Lastly, pour vegetable oil into the batter and gently fold it in.

Preheat a frying pan and grease it with vegetable oil the first time. Add some of the batter—about 1.5 tbsp—and shape it into a round.

Reduce the heat almost to minimum, fry the pancake for about 1–2 minutes, and flip it to the other side. Fry for the same amount of time.

Place the hot pancakes on a plate and serve them with various sauces and sour cream.
