Prepare all the ingredients.

Pierce the sweet potato with a fork and bake until tender at 220°C. That will take about 45–70 minutes, depending on the size of the sweet potato.

Peel the sweet potato, mash it with a fork into a purée, and measure out 125 grams for making the pancakes.

In a blender, blend the sweet potato purée with the milk, apple cider vinegar, vanilla flavoring, and maple syrup until smooth.

In a separate bowl, mix all the dry ingredients.

Pour the liquid mixture into the dry ingredients.

Mix gently. The batter should be about the same consistency as for pancakes.
