1. Spread the hazelnuts in an even layer on a baking sheet and place in a preheated oven at 180 degrees for 5 minutes. Transfer the nuts to a towel, cover them, and rub gently with the towel to remove the skins.

2. Evenly spread the almonds on a baking sheet and place in a preheated oven at 180 degrees for 5 minutes. Coarsely chop the cooled nuts.

3. In a bowl, mix the sifted flour, cocoa powder, baking powder, cinnamon, ginger, nutmeg, finely chopped dark chocolate, chopped candied fruit, and nuts. In a saucepan, combine honey and sugar, and cook until golden in color.

4. Immediately pour the hot caramel into the hot mixture, making sure it doesn't touch the sides of the bowl. Mix well and spread evenly into a baking pan lined with parchment paper and greased with butter.

5. Place in a preheated oven at 150 degrees for 35-40 minutes. Let the panforte cool completely in the mold, then remove it and dust with cocoa powder.
