
Pancetta
Description
Perfect for the table and for drinks. We usually order dishes like this at restaurants. But my recipe is just as good, so don't waste time and get cooking! It's best to slice the finished pancetta into thin strips, like bacon, and place them on a soft piece of ciabatta or any other bread. Can be served warm or chilled.

Step 1
Mix all the spices and coat the meat in them. Place the meat in a mold, cover with a lid, and refrigerate for 7 days. Each day, turn the piece over and gently "massage" it.

After one week, drain off any liquid that has separated (there may be none, and that is normal). Rinse the brisket and pat dry. Hang the brisket in a dark, cool place.

The pork belly cures for about 2 weeks. It will be ready when it has lost about 30% of its initial weight.
