
Garlic Pampushki
Description
A tasty appetizer for any gathering. Pampushky are fairly easy to make, but like any other baked goods, they require time and patience. The dough rises for about two hours and proofs for another 40–45 minutes. But it bakes very quickly — just 15–20 minutes. Good luck, and they can be served warm or chilled.

Step 1

First, in a deep bowl, mix the yeast and water. Then add 2 tablespoons of sugar. Mix well until the yeast is fully dissolved. Let the mixture rest briefly (2–3 minutes) until it starts to bubble.

Add a cup of flour to the yeast mixture, mix, and set aside.

In a food processor, mix: 2 cups flour, the remaining sugar, melted butter, milk, and salt. Mix everything until you have a uniform dough. If you don’t have a food processor, use a blender. Then add the yeast mixture from the bowl to the dough, plus another 1/4 cup flour. Mix again.

Next, transfer the dough to a bowl greased with vegetable oil, cover with plastic wrap, and leave for two hours. The dough should double in size.

Make garlic butter. To do this, mix room-temperature butter, chopped parsley, and minced garlic in a bowl, and season with salt and pepper to taste.

Once the dough has risen, roll it out. Evenly spread garlic butter over the surface of the flatbread and cut it into strips about 3 cm wide.

Roll the strips into rolls and place them in the pot.

Cover with a towel and let rest for another approximately 45 minutes. Then bake the pampushky in a preheated oven at 190 degrees for 15–20 minutes.
