
Halibut with sauce
Description
If chicken with pineapple or duck with berry sauce no longer impresses anyone, then fish with a sweet fruit sauce will cause complete delight. Pan-seared halibut fillet, crispy on the outside and tender on the inside, tastes completely different—and much more exciting—with an interesting and unusual sauce made from mango, orange, and ginger.

1. I have fresh halibut fillet, so I wash it right away, dry it thoroughly with paper towels, and season both sides with salt and pepper.

2. Place the fish on a hot grill and sear on both sides until golden brown (about 10 minutes total).

3. Peel the onion and cut into large pieces. Peel and coarsely chop the garlic, mango, and ginger. Set aside a few mango slices for garnish.

4. In a pan with sunflower oil, sauté all the vegetables and fruits, sprinkle with a little black pepper.

5. Transfer the ingredients from the skillet to a blender, add the juice of half an orange, and blend until smooth, forming a uniform paste-like consistency.

6. Wash and finely chop the dill, add it to the blender and blend once again – this is the sauce.

7. Serve the fish on a lettuce leaf, generously drizzle with sauce, and garnish with a few cubes of mango.
