
Cinnamon Palmiers
Description
Homemade baked goods for tea. Palmier cookies are French “ear”-shaped pastries made from puff pastry with a variety of fillings. They are usually served at parties as a snack. This recipe yields about 30 cookies. They are prepared very quickly and easily; all you need to do is roll out the dough, sprinkle it with sugar and cinnamon, roll it up, slice, and bake. Instead of cinnamon you can use any other spices to taste. Serve warm or cooled. Perfect with tea.

1. Preheat the oven to 220 °C. Line two baking trays with parchment paper or silicone mats. In a bowl, mix sugar, cinnamon and salt. Lightly sprinkle the sugar mixture onto a clean work surface or a clean kitchen towel. Roll out the puff pastry on the work surface into a rectangle measuring 30 × 37 cm. Evenly spread the sugar filling over the pastry.

2. Starting from the long end, tightly roll the rectangle into a log from both sides until the two opposite sides meet together.

3. Slice the dough into pieces about 1 cm thick and place them on the prepared baking sheets. The cookies should be spaced sufficiently apart from each other.

4. Place the baking sheets in the oven and bake the cookies for 10–12 minutes, until golden‑brown. After the time is up, immediately transfer the cookies to a rack and let them cool completely (the melted sugar may harden, causing the cookies to stick to the sheet).
