
Sukhumi baklava
Description
Delicious pastry for the whole family. Although Turkey is considered the birthplace of baklava, many Eastern countries have already adopted and adapted this sweet treat according to their own customs and traditions. The basis of this dish is flaky pastry and a filling made of walnuts. Baklava is served cooled, together with hot aromatic tea.

1. Sift the flour into a bowl to enrich it with oxygen, add the package of butter, and rub the contents of the bowl into crumbs.

2. I transfer the sour cream to a bowl, add a pinch of salt and baking soda to it; after this, the mixture will foam up.

3. Add sour cream and 3.5 egg yolks, which I previously separated from the whites, to the flour crumbs.

4. First, I mix the contents of the bowl with a spoon, then knead the dough by hand, divide it into 3 parts, and put the dough into the refrigerator.

5. Peel walnuts, lightly fry them in a pan, then chop into crumbs using a blender.

6. Transfer the egg whites to a bowl, add the freshly chopped nuts, cinnamon, and granulated sugar, then mix thoroughly until smooth and uniform.

7. Take one portion of dough out of the refrigerator, roll it out very thinly, transfer the sheet onto a baking tray, and place it in the preheated oven for 5 minutes.

8. Meanwhile, I take out the second part of the dough and roll it out as thinly as the first one. I line the baking tray with parchment paper, place the raw dough layer on it, and spread half of the walnut filling on top.

9. Place the baked crust from the oven onto the filling, then add the second part of the filling on top, spreading it evenly over the entire surface.

10. I take one-third of the dough from the refrigerator, roll it out into a sheet, then place it on top of the filling.

11. I slightly dilute the remaining part of the yolk with water and use a brush to coat the top of the dessert.

12. Cut everything into diamonds and place in a preheated oven at 200 degrees for 30 minutes.

13. After cooking, I cut the diamonds again and chill thoroughly; I serve the ready baklava with hot tea.
