Description

The recipe won't take much time. You can add absolutely any vegetables you have on hand to this simple vegetarian paella. Frozen vegetable mixes, or canned peas and corn, for example, will also work. You can vary the spices to taste, making the dish different each time. Serve hot.

    1. Peel the onion and slice it thinly into half-rings or dice into small cubes. Pour a little olive oil into a saucepan and add the onion. Sauté until translucent.

    2. Wash the sweet pepper, clean it, and cut into thin strips. Also peel and mince the garlic and fennel.

    4. Add the pepper, fennel, and garlic to the fried onions. After 2-3 minutes, add salt and spices to taste. Mix thoroughly and continue frying until the pepper becomes tender.

    5. Add rice to the saucepan. Gently stir and pour in water or broth. Add bay leaf and, if desired, a little rice vinegar. Cover with a lid and simmer over low heat until cooked.
