Description
I recommend using poultry—duck and chicken—as a base. They are perfect for paella. Aromatic spices are a must. And one more important point—once the rice is added, the dish should not be stirred.

1. Boil the pre-soaked beans until cooked. Separately, prepare a vegetable broth.

2. Separate the fat from the duck fillet and cut everything into small pieces. Place the fat in a high-sided skillet and melt over medium heat.

3. Add the fillet and chicken legs. Fry until browned. Then add tomato paste.

4. Pour in a little broth, add aromatic herbs. Bring to a boil.

5. Add the boiled beans and mix. Then add the rice, season with salt and spices to taste. Simmer over low heat, gradually adding broth as needed, until the rice is fully cooked. Be careful not to overcook the rice! Enjoy!
