
Paella with seafood and chicken
Description
The base of the dish is rice, cooked with vegetables, seafood, chicken meat, and spices. You can prepare each variation separately, resulting in three different types. Paella is served as a standalone dish. It is very nutritious and filling, perfect for a festive table or a family dinner.

1. Cut the chicken into small pieces, wash, pat dry with paper towels, and season with salt. Sear the meat in a skillet with olive oil until browned, then add water, bring to a boil, and simmer for another 10 minutes.

2. Peel and dice the onion into large cubes. Wash the pepper, remove the seeds, and also cut into large cubes. Peel and mince the garlic. In a large skillet, heat olive oil and sauté the onion first, then the pepper. After that, add the garlic.

3. Peel the shrimp and mussels, cut the squid into pieces. Add the seafood to the vegetables in the skillet, mix and sauté until the liquid has evaporated.

4. Pre-soak the dried fruits in hot water for a few minutes, then drain and add them to the pan. Sauté briefly, add the chicken pieces and turmeric, and if needed, add salt.

5. Rinse the rice until the water runs clear, drain it slightly, then add it to the pan. Pour in the broth from cooking the chicken, along with wine; if necessary, add more water so that the liquid level is about a finger above the rice. Simmer over low heat until the liquid is absorbed. Cover the pan with foil and place it in a preheated oven at 180 degrees Celsius for 20 minutes. Serve the dish hot, garnished with fresh herbs and lemon wedges.
