
Paella with mussels
Description
Making mussel paella at home is incredibly easy! You can always vary the classic mussel paella recipe by adding shrimp, squid, and any seafood you like.

Step 1

Peel the garlic cloves, chop with a knife, place in a deep frying pan preheated with butter, fry for one to two minutes to release the garlic juice, then remove from the oil.

Peel the onion and chop finely with a knife, then sauté in garlic-flavored oil until golden and soft.

Then add the rice, mixing it with the butter and onions. Sauté the rice over low heat until it becomes almost transparent and changes color from white to pearly.

Now we start adding the liquid. Many people like to cook paella with chicken broth, but I think it overpowers the delicate flavor of the mussels. Instead, add dry white wine and water, a bay leaf, and a small chili pepper. Be careful not to overdo it with the chili. Bring the mixture to a boil, cover with a lid, and let the rice simmer in the liquid. Important: the rice should never be left without liquid. As soon as it's fully absorbed, add more. For 200 grams of rice, you'll need approximately three cups of water. When the rice is almost done, remove the chili and bay leaf, then season with salt and pepper to taste.

Thaw the mussels.

Add to the rice and simmer under the lid for another 5-7 minutes.

Sprinkle the paella with cheese.

Mix, sprinkle with parsley, and serve!
