This recipe for chicken and mushroom paella uses quite traditional ingredients that are usually readily available, so it's definitely worth making this paella at home.     1. Wash the chicken fillet, pat it dry slightly, and cut into thin strips or small cubes.

    2. Heat a little olive oil in a frying pan or sauté pan and add the fillet. Sear briefly until a crust forms, then transfer to a plate. For the recipe of chicken and mushroom paella, you can also use chicken wings, drumsticks, or thighs.
