
Paella (simple recipe)
Description
In Spain, paella is traditionally simmered in a cast-iron pan and often served right from it. The main ingredients of the classic dish are rice, seafood, and vegetables, but you can add other ingredients you like. I first tried paella with shrimp, chicken, and Spanish chorizo sausages. All the ingredients are easily available, and chorizo can be substituted with any smoked sausages. Today I'll share a simple recipe.

Wash the chicken, remove all bones and skin, leaving only the fillet. Fry in a pan with heated oil until golden brown.

Wash the tomatoes, onion, and garlic, peel them, and finely chop. Pour a spoonful of warm water over the saffron and let it steep for a while.

When the chicken is browned, remove it from the pan and set aside. Slice the sausages into rounds, and peel the shrimp, leaving the tails intact.

Add the onion, garlic, and sliced sausages to the same skillet and sauté until golden brown for about 5 minutes.

Add saffron and paprika to the pan, heat for a minute to release the aroma of the spices, then add the chopped tomatoes.

When the tomatoes have slightly fried and softened (about 5 minutes), add the rice, fried chicken, and pour in the broth. Season with salt and simmer over medium heat for 20 minutes.

When the rice has absorbed all the liquid, add the peeled shrimp and peas, and simmer over low heat for another 10 minutes.
