
Seafood paella

A delicious, quick, and aromatic dish that will make a perfect end to the day and a romantic dinner

Step 1

Fry garlic in olive oil, then discard it. In the aromatic oil, sauté finely chopped onion, bell pepper, and chili pepper until the onion becomes translucent.

Now I add the washed round-grain rice to the sautéed vegetables and fry everything together until the rice becomes translucent.

Now I pour broth over the rice, just enough to barely cover it. Then, I'll gradually add more broth as it evaporates and gets absorbed by the rice. I also add saffron threads at this stage—they will give the paella a beautiful color.

After 10 minutes, I add seafood and peas to the rice, place an unpeeled garlic head in the center, and pour in some broth. Cook over low heat.

You can stir the paella only three times: the first time when adding the rice, the second time after 5 minutes when pouring in broth and adding saffron, the third time after another 10 minutes when adding seafood and peas. Another 5 minutes and the paella was ready.

Paella is usually served in the same pan in which it was cooked.
