
Seafood paella
Description
The recipe won't take much time. Traditional paella is made with a seafood mix (squid, octopus, mussels, shrimp, scallops); you can use fresh or frozen. Saffron is a must-have spice, added for a rich yellow color. In different countries, you can find recipes for vegetarian or even meat paella. Serve hot.

1. I prepare all the vegetables: I blanch the tomatoes and remove their skins, then cut them into medium-sized pieces; I wash the pepper, clean it, and cut it into strips, peel the garlic and slice it into rounds, salt everything and let it sit for a few minutes.

2. I have fresh shrimp, so I just boil them in salted water for 5-7 minutes, then transfer them to a bowl.

3. I rinse the mussels under running water to remove sand, then boil them in the same water used for cooking the shrimp until done.

4. I wash the cleaned squids and slice them into 0.5-centimeter rings.

5. Peel and wash the onion, then cut it into small cubes. Heat a frying pan with olive oil and sauté the onion in it.

6. After a few minutes, I add the previously prepared vegetables to the onion, mix well, and cook for about 5 minutes.

7. I add the squid rings to the sautéed vegetables and cook for no more than 1 minute, otherwise they will become rubbery.

8. I rinse the rice in several changes of water until the water runs clear, then add it to the pan with the other ingredients.

9. I thoroughly mix all the ingredients in the pan and cook for 3-4 minutes.

10. Measure out one cup of the water in which the seafood was boiled, dissolve the saffron in it, then pour the broth into the pan, add the green peas, and simmer over low heat for 10–20 minutes. A couple of minutes before finishing, add the shrimp and mussels, turn off the heat, and let it steep for 2 minutes.
